Victorian Tea Sandwiches

The traditional Victorian tea time is regaining popularity as ladies tea parties. complete with finger sandwiches, china teapots and cups and all the associated finery. Here are a few recipes and ideas for making Victorian tea sandwiches for an elegant and tasteful tea party.

Asparagus Rolls

Place cooked asparagus on a very thin slice of buttered brown bread and roll up.

Smoked Salmon Rolls

Place a slice of smoked salmon on thin slice of buttered bread. Sprinkle with lemon, roll and wrap tightly in plastic. Before serving, slice into rounds.

Ribbon Sandwiches

Layer pieces of buttered bread, filling each layer with different fillings: egg yolks for a yellow shade, cream cheese for a white shade, watercress for a green shade. Wrap in plastic, refrigerate at least three hours. Cut into slices before serving.

Cucumber Tea Sandwiches

1-2 European cucumbers
Salt and black pepper
White wine vinegar
Pumpernickel or wheat bread very thinly sliced
Butter at room temperature


Peel a European cucumber and slice it into transparent slices. Sprinkle with a little of white wine vinegar and salt and let drain in a sieve for about 1/2 hour. Drain away any excess water and pat dry with a paper towel. Cover a slice of lightly buttered thin brown bread with 2 layers of cucumber and a bit of black pepper and top with another slice of buttered bread. Press firmly with the palm of your hand. Cut off the crusts. Cut into small rectangles or triangles. Cover with plastic wrap until served.

Tips on Making Tea Sandwiches
  • Choose thinly sliced sandwich bread with a tight grain.
  • Apply a think layer of butter to seal the bread from moist ingredients.
  • Cut away all crusts
  • Cut tea sandwiches into small, dainty portions.
  • Put unsliced bread into the freezer for an hour so it is easier to slice it very thin.
  • Remove crusts before slicing
